I remember my childhood summers very well. My father was and still is a strawberry producer. I really grow up with strawberries and a lot of work on the fields. It was the perfect summerjob. And I can't imagine how many strawberries I ate every summer. Did you know they are superhealthy?
I believe we all have something with strawberries? In Sweden we eat about 40 million liters of strawberries every year, of which 6-7 million liters are eaten during the Midsummer weekend (Swedish celebration around 25th of June). And in this week EVERYONE is making a Strawberry cake.
Here is my best recipe that I believe I got from my grandmother.
Strawberry Cake Ingredients
8 people
12-15 digestive biscuits
50 g butter
5 dl of vanilla-flavored cottage cheese
3 dl whipped cream
2 dl strawberry jam
For decoration: Fresh strawberries
How to make it
Crush the biscuits and mix with the melted butter. Pack the cookie crumb batter into the bottom of a pie dish with a removable bottom and high sides. Spread the cottage cheese over the cookie crumbs. Whip the cream. Heat the jam until it melts. Mix half of the cream with 1 dl of cooled jam. Spread this over the cottage cheese. Place in a cold place for a while. Then add the rest of the cream and finish with the jam. Let everything solidify in the fridge or freezer. If the cake is frozen, it is easy to cut nice slices that "melt" directly on the plate to the right serving temperature. Decorate with strawberries when serving and preferably some lemon balm.
